Crisp Agave flavor with hints of citrus and a touch of black pepper from the Don Julio Blanco Tequila enhances the flavor of this unique and custom Tequila-Infused Pickled Red Onion Guacamole recipe.

Tequila-Infused Guacamole


  • 2 Large Avocados
  • ¼ C. Finely Chopped Pickled Red Onion (see prep below)
  • 1/8 C. Chopped Cilantro
  • 2 TBL. Pico Tequila-Infusion Juice
  • ½ tsp. Kosher Salt


Pit and place 2 large Avocados in a mixing bowl and roughly smash (keeping it chunky). Add to bowl the ¼ C. Finely Chopped Pickled Red Onion, 1/8 C. chopped Cilantro, 2 TBL. Pico Tequila-Infusion Juice, and 1/2 tsp. of Kosher Salt. Garnish with more Tequila-Infused Pickled Red Onions and Cilantro leaves.

Tequila-Infused Pickled Red Onion


  • ½ C. Don Julio Blanco Tequila
  • 2 C. Water
  • 1 Medium Red Onion
  • ½ tsp. Kosher Salt
  • ½ tsp. White Sugar
  • ½ C. Apple Cider Vinegar


In heavy saucepan, bring 2 C. of water to boil. Take one medium Red Onion, thinly slice and half moon, separate and place in strainer. Take boiling water and slowly pour over strainer to blanche onion and let strainer sit in run off for 2 minutes. Drain and set aside.

In clean Lexan, mix together the following combination.

Combine the ½ tsp. Kosher Salt, ½ tsp white sugar, ½ C. Apple Cider Vinegar, and ½ C. Don Julio Blanco tequila. Mix to dissolve salt and sugar. Add strained onions, stir, cover and refrigerate for a minimum of 50 minutes.
